I survived Day 2 on the Optimal Weight 5 & 1 Program and I am here to tell you ALL the “deets”… the good, the bad, and the ugly! Woohoooo!

Day 1 Quick Recap – Lessons Learned
I wanted to briefly mention the lessons that I took forward from that LONG first day on the Optimal Weight 5 & 1 Program.
- Start each day with the mindset of taking one day at a time.
- I loved the vanilla shake.
- The Frosted Cookie Dough Bar was delicious but a very small portion.
- The smoky BBQ crunchers tasted awful to me but definitely aided my water intake.
- I loved the Roasted Garlic Creamy Smashed Potatoes.
- Eat the applicable “fuelings” with a baby spoon.
- The healthy snack option is your friend.
- When feeling low, turn to the Optavia community for motivation and mental support.
- The Lean & Green Meal is a HUGE portion of food. This is a good thing!
- The Decadent Chocolate Brownie is to die for and really appeases that sweet tooth craving.
I woke up on Day 2 of the Optimal Weight 5 & 1 Program down 2.8 pounds! This was definitely a sight to sore eyes and gave me the much-needed motivation for Day 2. I knew that I could stick this out at least another day… snow or no snow!
FUELING #1 – Chocolate is GOOD!
My day began around 8am (remember… it is snowmageddon down here in Texas) with a chocolate shake which I meticulously blended in my FREE Optavia Blender Bottle. I was pleasantly surprised at how rich this was… I even added a little more water to thin it down some. I sipped and sipped very slowly… I wanted it to last!
Hunger hit about an hour later. This could have had something to do with the hubbie re-heating the chili that he made yesterday for the rest of the household. I just kept reminding myself… I can do this.
I downed some water and hopped on to the Optavia community for a little support… it was JUST what I needed.
FUELING #2 – Mac & Cheese Failure
Around 10:30am I decided it was time for fueling 2… I chose to try the mac & cheese. I prepared it in the microwave per the instructions. I have to say… my noodles just wouldn’t get soft. Disappointment hit as I just knew that I would LOVE this fueling. I did get it down even with the crunchy noodles lol utilizing my baby spoon, of course!
It was time now to bundle up and head out for some sledding… I was SO excited to get out of the house! I could already tell that I needed to stay busy today. I did forget my water and ran back in to grab my jug… they say that water is SO important!
FUELING #3 & #4 – Bars for the Win
I grabbed two different bars for my 3rd and 4th fuelings of the day. The bars were just easy to grab and seemed convenient at the time.
At 1:00pm it was time for fueling #3. I chose the Drizzeled Berry Crisp Bar. If you noticed, I am trying to make myself try new things! It was delicious! It did seem a little more filling as compared to the Frosted Cookie Dough Bar that I consumed yesterday, but it still was pretty small.
I was frozen… I don’t handle cold weather well at all. It was time to sit in the truck with the heat on and observe the kiddos from a closed window. Again… I turned to the Optavia Community for support and motivation.
I made it until 3:00pm and decided to partake in Fueling #4. It was another bar… the Creamy Double Peanut Butter Crisp. It was yummy and still seamed like more food vs. the Frosted Cookie Dough bar, but I did manage to get peanut butter and little crispers EVERYWHERE!
It was time to head home… the kiddos were freezing and it was only getting colder. The temperature was supposed to get below 0 degrees tonight. NEVER can I EVER recall this happening in Texas.
THE LEAN & GREEN – Noodles Anyone?
Once I thawed out via a hot bath, it was time to think about what was for dinner. Because I didn’t adequately prepare for my lean & grean meals prior to the sudden appearance of a winter wonderland, I was pretty limited on my choices for the one meal that I was to prepare daily.
Because beef stew was re-heating for the hubbie and kiddos, I knew that I needed to find something to eat and fast. If I didn’t, I would be off-plan with a bowl of beef stew before I knew it.
I looked around in the pantry and found some miracle noodles that I had utilized months before when I had tried doing the keto diet. After quickly asking my coach and finding out that they were on plan, I decided that I would create some sort of chicken pasta!
If you aren’t familiar with Miracle Noodles, they are a type of shirataki noodle that are created from the Japanese konjac plant. They smell horrible when you open the package. It is almost like a “fishy” scent. I always wash them very thoroughly under running water and then put them on the stove in boiling water. This definitely removes the smell.
You can flavor the noodles with spices and it kind of takes on the taste of whatever you flavor it with. I utilized 1 teaspoon of cayenne pepper with mine as I LOVE spicy foods. This equaled 2 of my 3 available condiments for the day.
One-half cup of these noodles equals 1 green, so I prepared 1.5 cups of these noodles to get ALL of my greens in.
I paired the noodles with 6 ounces of chopped grilled chicken breast and added two tablespoons of melted low-fat cream cheese as a sauce (and my healthy fat) to complete my meal.
This meal was ready by about 5:30pm and was VERY filling; in fact, it took me about an hour to finish the whole thing!

FUELING #5 – A Return to the Infamous Brownie
At 8:30pm, I was still extremely full, but I know the rules… you must eat within 3 hours. It was time for my LAST fueling of the day.
The brownie was SO delicious yesterday, that I opted to do a repeat; of course, batter-style. Again, I was overly satisfied with this choice.
Final Thoughts on Day 2 – I Did It!
I made it through Day 2 on the Optimal Weight 5 & 1 Program!
Upon retiring for bed, I felt a sense of accomplishment and also a feeling of anxiousness to hop on those scales in the morning! There was also a full bladder from ALL of this WATER! LOL
I was also anxious due to the fact that here, in Texas, we would hit sub 0 temperatures tonight! My oldest daughter, who is a nurse, HAD to report to the hospital for work at 6am in the morning. Due to the expected ice and the fact that my hubbie has a big 4-wheel drive truck adorned with huge tires, we were responsible for getting her there!
Tomorrow is Day 3… I’ve got this!
You know that I don’t like to end without touching on my results for the day! I woke up on Day 3 of the Optimal Weight 5 & 1 Program to TWO additional pounds gone! This makes a total of 4.8 pounds lost forever in TWO DAYS!
